Start from the price book, not the supply house
The tasks you sell most decide what the truck should carry. A price book that lists the parts each task uses is also a truck stock list, and the two stay in step because they are the same record.
Restock from what was invoiced
Every invoiced part came off a truck. Reading the week's invoices gives the restock list without anybody counting bins, and it prices the stock at what was actually paid.
Mark up from cost, on the book
The parts markup lives in the price book, applied to your cost, so every technician quotes the same price for the same part. A markup that lives in each technician's head is a different price on every truck.

How much stock should a plumbing truck carry?

Do I need barcodes?
Not at one to five trucks. A parts list per task and a weekly restock from the invoices does the job. Barcodes earn their keep when a warehouse and several trucks are counting the same stock.
Where does the markup go?
On the price book, applied to your cost. That way the invoice, the estimate and the book all quote the same part at the same price, and changing the markup changes them together.
